Healthy Not-chos!

Nachos have always been one of my favorite splurge foods. Thanks to my amazing dietician friend, Kelli (KelliRD.com),  I have discovered a way to enjoy this all-time favorite in a non-dairy way that is delicious and nutritious!


Spicy Organic Vegetarian Chile (1/2 can)

Trader Joe’s Quinoa & Black Bean Infused Tortilla Chips

1.5 C raw unsalted cashews

1 juiced lemon

1/2 red bell pepper

1.5 Tbsp Onion Powder

2 Tsp sea salt

1/2 avocado (sliced)

Place the cashews in your Vitamix and top with water. Add bell pepper, lemon juice, onion powder and sea salt. Blend until smooth.

Place chips on plate. Top chips with heated chile, Not-cho cheese sauce and avocado. Enjoy your delicious Not-cho treat!






YogiRunner Taco Salad

If you are in the mood for something spicy, try the YogiRunner Taco Salad.

Chop up some romaine lettuce, tomatoes, red and green bell peppers and a few olives.

Add a can of kidney beans, a can of garbanzo beans and some ground turkey sauteed in chile powder.

If you really want a kick, top with some NM green chile and you have yourself a fiesta!
